Paneer Kadhai

Ingredients:-
1.)Paneer (cottage cheese) cut into cubes 250 grams
2.)Onions 2 medium finely chopped
3.)Tomatoes pureed 3 large
4.)Ginger-garlic paste 2 teaspoons
5.)Red chilli powder 2 teaspoon
6.)Coriander powder 1 teaspoon
7.)Turmeric powder 1/4 teaspoon
8.)Garam masala 1 teaspoon
9.)Cloves 3
10.)Cinnamon 1 inch sticks
11.)coriander leaves a few
12.)2  tablespoon oil
13.)Salt to taste
14.)2 tablespoon butter
15.)1 medium capsicum diced
16.)200gm  kaju paste

Method:-
Step 1
Heat butter in a kadai and saute the cottage cheese pieces till golden brown. Soak them in 4 cups water.

Step 2
In the same pan add bay leaf, cloves, cinnamon sticks, chopped onions and saute till it gets golden brown .

Step 3
Now add ginger garlic paste. Saute well till lightly golden.

Step 3
Add red chilli powder, coriander powder, turmeric powder, garam masala and little water. Mix well and allow the mixture to boil then add diced capsicum & cook tillit gets soft .Now add tomato puree and mix again then add kaju paste & cook till gravy gets thick .

Step 4
Cover and cook for five minutes till oil surfaces.Add salt and drained paneer pieces. Garnish with coriander leaves ,grated cheese &  serve hot.

Chef's tip :
You can substitute chopped onions with pureed onions this will increase the quantity  of the gravy.
