Blueberry cheesecake

To make a perfect Blueberry cheesecake just follow the procedure everything is showed step by step with picture.

Ingredients:
A.)For the base:
1.)100gm butter
2.)250gm  digestive biscuit, finely crushed

B.)For the filling:
1.)300g/11oz tubs light soft cheese(I used D'lecta cream cheese, at room temperature)
2.)175g  powdered sugar
3.)1 whole  lemon juice
4.)1 tsp vanilla extract
5.)200ml amul fresh cream

Method:
For making the base:
1.)Crush the digestive biscuits in a mixer then add melted butter to it and mix throughly.
2.)Remove the mixture from the mixer & put it in the 8 inch round cake mould .
3.)Press the mixture with help of spatula
4.)Now refrigerator the cake mould for atleast 2 hrs or till it becomes hard.

For making cheesecake:
1.)Now take 400gm cream cheese , 200gm fresh cream,lemon juice ,vanilla essence & powdered sugar in a mixer jar & mix until smooth & creamy .This is your  cheesecake topping.
2.)Now remove the cake mould from fridge & pour the cheesecake topping over it & bake it for atleast 30 mins or until the cheese melts.
3.)After baking allow  it to come to room temperature then with a spatula add the blueberry topping over it .
4.)Refrigerate  it overnight.
5.)The next day your blueberry cheesecake is ready just cut a slice of it and enjoy.
