Paneer tikka masala Restaurant style/होटल जैसा पनीर टिक्का मसाला

Ingredients:
For marination of paneer-
1)150 g cubed paneer
2)1 tbsp red chilli powder
3) 2 tbsp cumin powder
4) 1 tsp chaat masala powder
5) 1 tbsp coriander powder
6) 2 tbsp roasted besan
7) 1 tbsp mustard oil
8) salt as per taste
9)1 cup plain yogurt

Ingredients for gravy-
1) Brown onion paste - 1 cup (3 to 4 onions used for making)
2) Tomatoes puree (3 medium tomatoes pureed)
3) 2 tbsp magaj or cashew paste
4)1 tbsp oil 
5) 1 tbsp ghee

Spices required:
1)2 bay leaf
2) 2 kashmiri red chillies
3) 3 green cardamoms whole 
4) 3 to 4 cloves 
5) 4 to 5 black pepper corns 
6) 1 small cinnamon stick
7) 1 black elaichi / badi elaichi
8)1/2 tsp turmeric powder
9)1 tbsp chilli powder
10) 1 tbsp cumin powder
11) 1 tbsp coriander powder
12)1 tbsp kasuri methi
13) salt to taste

Garnishing:
1)2 tbsp whisked cream 
2)2 mint leaves
3) freshly chopped coriander 
4) 2 green chillies slit
5) 2 slices of lime (thinly sliced)

Paneer Tikka

  1. Cut the paneer into 2×2 inch pieces /cubes, add in the red chilli  powder, chaat masala powder, roasted besan, salt,coriander powder. Mix it well.
  2. Add in the yogurt and mix till all the paneer pieces are well coated with the spices and yogurt.
  3. Cover and keep this marinated paneer in the refrigerator for 15-20 minutes or even longer.

Masala/Curry

  1. Heat 1 tbsp of oil and 1 tbsp of ghee in a pan. Once hot add bay leaf , cloves, badhi ekachi, green cardamom pods, kashmiri red chillies cinnamon stick and shahi jeera  seeds.
  2. Once the seeds crackle, add the brown onion paste. Fry the paste till it leaves oil. 
  3. Once onions are done, add the spices powders mentioned above . Mix it well don't let the masala burn. Also add little water so that masala cooks  without burning.
  4.  Now add tomato puree and cook till they get cooked properly cover and cook to reduce cooking time . This may take upto 7 to 8 mins. 
  5. The mixture is cooked, switch off the flame and allow it to cool a bit. Pour the mixture into a blender and puree it. Set aside.
  6. Roast the marinated paneer till golden brown in color from both sides.
  7. Pour the pureed masala in a wok/kadhai and add water to it. Stir and add cream and chopped coriander leaves.
  8. Cover and cook for 4-5 minutes on medium-low flame.
  9. Add the roasted paneer pieces, let it simmer for 2-3 minutes.
  10. Switch off the flame and garnish with chopped coriander leaves and cream.
  11. Serve hot with butter naan or any bread of your choice.,
