DHABA EGG MASALA | DHABA EGG CURRY | DHABA STYLE ANDA MASALA | ढाबा अंडा करी


The taste of Dhaba food is phenomenal and fantabioulus. We usually find these dhabas on highways. They cook some amazing dishes in traditional style which enhances the flavour of the dish. Dhaba Style Egg Curry is one such recipe which is spicy, tasty and full of flavours.

The magic ingredient in this recipe is mustard oil as it has a robust, sharp flavour when smoked and dishes cooked in this oil have an amazing taste evertime I make it.


Ingredients:
1.Boiled eggs - 4 to5 
2.Onions, fine chopped- 3 medium
3.Ginger, fine chopped- 3 tsp
4. Green chillies slit - 2 tsp
5. Grated red tomatoes- 3 medium
6. Cumin seeds- 1 tsp
7. Coriander seeds -1 tsp
8. Turmeric powder- 1/4th tsp ( to be added to boiled eggs)
9. Red Chilli Powder- 1/2 tsp in eggs + 1 tsp while cooking
10. Coriander powder- 1 tbsp
11. Cumin powder- 1 tbsp
12. Kasuri Methi- 1 tsp
13. Oil- 1 tbsp
14. Mustard Oil - 1 tbsp
15. Coriander leaves, chopped- 1/2 cup
16.Salt- 1 tsp

Whole spices used:
1. 2 bay leaves 
2. 1 black elaichi
3. 2 small cinnamom sticks 
4. 4 to 5 black pepper corns
5. 4 to 5 cloves 
6. 3 green cardamom 

Method:
  1. To  begin making the Dhaba Style Egg Curry, prep all the ingredients and keep them ready.

  2. Boil the eggs and keep them ready as well. Make incision on the boiled eggs so that masala get into the eggs.

  3. Heat mustard oil in a kadhai. Let it smoke then add 1/2 tsp turmeric powder and 1/2 tsp red chilli powder and shallow  fry  the boiled eggs.

  4. Now let's prepare our dhaba style gravy . Add bay leaf, black cardamom, black peppercorns, green cardamom, cloves until you can smell the aromas coming through.

  5. Add the finely chopped onion, green chilli and ginger garlic  padte and cook them till they turn soft and translucent. 

  6. After a minute, add all the dry masalas including kashmiri red chilli powder, turmeric powder, coriander powder and the required salt. Let it cook for about 3 to 4 minutes.

  7. Next, add the tomato puree and cook for about 7 to 8 minutes. 

  8. Mix properly and cook it well.

  9. Don't burn the masala add little water and make a thin gravy out of it.

  10. Once done, add kasuri methi and our shallow tried eggs, also add some coriander leaves, check the salt and adjust according to taste.

  11. Once done, transfer the Dhaba Egg Curry into a serving bowl and serve hot.
