Aloo gobi
Aloo Gobi Recipe: learn how to make Punjabi-style aloo gobi recipe, a classic vegetable dish with aloo (potatoes) and gobi (cauliflower). This simple curry goes wonderfully with roti ,kulchas,tandoori roti naan etc.if you have some dal tadka on the side is one of our favourite go-to comfort dishes. I even serve it with rice and moong dal tadka or vegetable sambar for a simple meal.
INGREDIENTS:-
1.)3 medium-sized potato, peeled and cut into halves
2.)2 cups cauliflower florets
3.)1 onion chopped
4.)½ tsp minced ginger
5.)½ tsp crushed garlic
6.)¼ tsp turmeric powder
7.)¾ tsp red chilli powder (adjust to taste)
8.)½ tsp cumin powder
9.)½ tsp coriander powder
10.)A pinch of garam masala
11.)2 medium sized tomatoes chopped
12.)A fistful of chopped coriander leaves & pudina leaves
13.)1 tbsp oil
14.)Salt to taste
15.)Oil for deep frying

Method:-
1.)Firstly wash & peel the potatoes then cut them into halves & keep aside.

2.)Now wash & cut cauliflower into big florets.
3.)Heat a kadhai & add oil for deep frying the potatoes & cauliflower.Now add the potatoes & cauliflower in 2 batches & fry them till they are golden brown in colour.
4.)After deep frying the potatoes & cauliflower keep them aside on a tissue paper so that the tissue absorbs the extra oil .
5.)Heat oil in a pan and add the chopped onions. When the onions turn soft, add the ginger and garlic and saute until fragrant (about 2 mins).
6.)After the onions cook well add the tomatoes & cook till they get soft & mushy.Now add chopped Tomatoes & cook till they get soft.
7.)Add the potatoes and cauliflower to this and cook on lowest heat, covered, mixing now and then so the vegetable pieces don't burn.
8.)Add the spice powders - coriander powder, turmeric powder, jeera powder, and chilli powder. Mix again until well combined.
9.)Cook until the spice powders don't smell raw anymore - another 2 mins or so. Now add some water so that the vegetables will be soft.
10.)The potatoes and cauliflower should be roasted and dry by now.
11.) Add salt.Finish off with a generous amount of chopped pudina leaves,coriander leaves and mix again.
12.)Serve hot with roti,chapati, naan,kulchas etc.
