Masala Bhaat

A delicacy from Maharashrastra made with lot of spices and vegetables is tasty and delicious Masala Bhaat. It is easy to make and fills your tummy and satisfies your taste buds too.
Ingredients:
1.)3-4 pepper corns
2.)1 bay leaf
3.)2-3 cardamoms
4.)2 cloves
5.)1 tbsp cumin seeds
6.)1/4 cup dry grated coconut
7.)1 tablespoon garlic paste
8.)1 tablespoon ginger  paste
9.)1/4 tsp asafoetida
10.)1/4 tsp turmeric powder
11.)2 slit green chillies
12.)Few curry leaves13.)1 shredded onion
14.)1 cup soaked rice
15.)2 cups water
16.)1 potato cubed
17.)Salt to taste
18.)2 tablespoon chopped coriander leaves .
19.)1/2 cucumber for garnish
20.)1/4th roasted papad for garnish
21.)1/2 carrot sliced
22.)1 tsp red chilli powder


Method:
1.)Soak a cup of rice in water for 20 mins .
2.)Prep your ingredients for the rice.
3.)In a pan heat oil,add bay leaf,cloves,pepper cons,cardamon and sauté it until the whole spices release their essential oils .
4.)Now  add cashews ,slit green chillies, curry leaves, shredded onions,ginger garlic paste  and sauté for few minutes.Then add  red chilli powder & turmeric powder mix well.
5.)Add some cubed potatoes,carrots and sliced  brinjal  and cover it for more 2 minutes.
6.)Now add cup of soaked rice, water and salt to taste & mix well .
7.) Pressure cook it for 4 to 5 whistles.
8.)Serve hot garnish with sliced cucumber,chopped coriander leaves & grated coconut .
