Broccoli Stem Soup

Never ever throw the broccoli stems you can prepare a hot soup from it which is healthy & filling for your tummy .

Cream of broccoli stems soup is a soup prepared with broccoli stems, stock and milk or cream as primary ingredients. 

Ingredients
Knob of butter
1tsp olive oil
1 large onion
5 cloves of garlic
600g broccoli Stems 
1 litre vegetable stock
2 tbsp cream
Salt and pepper, to taste

Method
Heat butter and oil in a pan over a medium heat until the butter melts.
Roughly slice the onion & garlic &  add to the pan, cooking for 5-10 minutes until soft. 
Add the chopped  broccoli stems to the pan, pour over the stock and simmer the mixture for 10 minutes until tender.

Blend with a hand blender or whiz in your food processor until liquidized.

Return to the saucepan add stock  and season to taste. 

Note:-
Serve piping hot with a sprinkling of your favourite croutons.
